Piedmontese cuisine has its roots in rural traditions.

Until the sixteenth century, Piedmont was a region of duchies and principalities constantly at war with each other, and the people, poor and oppressed, had to make do with the little food provided by local lords. Over time, a cuisine inspired by the common folk developed, but one that is not lacking in elegance and refinement. The Piedmontese, known for their natural sobriety but also for their love of good food, have rich and elaborate menus in which the rustic essence of the dishes is immediately apparent.

We have the utmost respect for the quality of the ingredients, whether noble or humble, pursued with an unrelenting desire to bring out their most authentic expression. Inseparable is the relationship with fruit and wine: a tribute to a land blessed by the heavens and offering excellent products throughout the year.
