Until the sixteenth century, Piedmont was a region of duchies and principalities constantly at war with each other, and the people, poor and oppressed, had to make do with the little food provided by local lords.
Over time, a cuisine inspired by the common folk developed, but one that is not lacking in elegance and refinement.
The Piedmontese, known for their natural sobriety but also for their love of good food, have rich and elaborate menus in which the rustic essence of the dishes is immediately apparent.
